Vegetarian Harvest Bowl

This cozy vegetarian dish combines creamy cottage cheese with roasted butternut squash and colorful stir-fry veggies for a high-protein, high-fiber meal that’s as satisfying as it is simple.

 

Vegetarian Harvest Bowl with Butternut Squash and Cottage Cheese

Ingredients

Makes 1 serving. Prep time <5 minutes. Cook time 15 minutes.

  • 0.5 cup or 110g 2% Cottage Cheese

  • 170g Organic Butternut Squash - frozen Mass River Farms

  • 1 cup or 85g Stir Fry Vegetables - frozen

  • 0.5 Tablespoon Olive Oil

  • 2 Teaspoons Mccormick, Grill Mates, Zesty Herb marinade

Cooking Instructions

  1. Measure or weigh the butternut squash and stir fry vegetable in a bowl.

  2. Drizzle the olive oil onto the stir fry vegetables in the bowl

  3. Sprinkle the Mccormick seasoning onto the vegetables, then shake all ingredients together.

  4. Add the bowl of vegetables into an air fryer

  5. Cook on 400 degrees for 15 minutes

  6. While the vegetables are cooking measure or weigh the cottage cheese into a bowl, ideally the one you plan to eat out of.

  7. Once the vegetables are cooked pour them into the bowl with the cottage cheese and enjoy!

This recipe makes one meal. Place all the ingredients into one bowl and enjoy!
