Vegetarian Sloppy Joes

This vegetarian version of beloved beef sloppy joes boasts loads of fiber (~11g/serv) and overall great macros for only 147 calories.

 

Ingredients

  • 4 cups water

  • 2 cups (1 16oz bag) green lentils

  • 2 Tbsp olive oil

  • 1 medium white or yellow onion, minced

  • 2 Tbsp garlic powder

  • 1 medium bell pepper, diced

  • Sea salt and black pepper (to taste)

  • 2 (15-ounce) cana tomato sauce

  • 2 Tbsp brown sugar

  • 2 Tbsp Worcestershire sauce

  • 2 tsp chilli powder

  • 1 tsp ground cumin

  • 1 pinch regular paprika

Cooking Instructions

  1. Cook the lentils: Rinse 1 cup green lentils and place them in a pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the lentils are tender but not mushy and most of the water has been absorbed.

  2. Sauté the vegetables: While the lentils cook, heat a large pan over medium heat and drizzle with olive oil. Add 1 cup chopped onion and 1 cup chopped bell pepper (any color) and sauté until softened. Season with garlic powder and black pepper.

  3. Add the sauces and seasonings: Stir in 1 can tomato sauce, 1–2 tsp brown sugar, 1 tsp Worcestershire sauce, and any remaining seasonings. Cook together for 2–3 minutes to combine flavors.

  4. Combine lentils and vegetables: Add the cooked lentils to the pan. Reduce heat to low, cover, and let simmer for 5–10 minutes so the flavors meld.

  5. Serve: Enjoy warm as a hearty, protein-packed dish on its own or as a side.
