Ground Turkey Egg Bake Casserole
This Ground Turkey Egg Bake Casserole is a hearty, high-protein breakfast that’s perfect for meal prep or feeding a crowd. Made with crispy hashbrowns, seasoned eggs, lean ground turkey, and melty cheese, it’s a balanced, satisfying dish that keeps you full for hours while still being simple to prepare and easy to customize.
Ingredients
Makes 8 servings.
20oz Hashbrowns
1lb 99/1 Ground Turkey
2 cups Reduced Fat Shredded Cheese
4 eggs
1 Cup egg whites
1 Cup milk of choice, I use Almond
1 Bell Pepper
1/2 White Onion
2 tsp onion powder
2 tsp salt
2 tsp garlic
Cooking Instructions
Preheat the oven to 350°F.
In a medium mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, and salt until fully combined.
Heat a skillet over medium heat and lightly grease it. Add the ground turkey and cook until fully browned and no longer pink, breaking it up as it cooks. Remove from heat and set aside.
Generously grease a 9×13-inch casserole dish with cooking spray or oil.
Spread the hashbrowns evenly across the bottom of the prepared dish.
Sprinkle the cooked ground turkey evenly over the hashbrowns.
Add an even layer of cheese on top of the turkey.
Chop the onion and bell pepper and layer them on top of the cheese
Slowly pour the egg mixture over the casserole in a zigzag pattern to help distribute the eggs evenly throughout the layers.
Bake for 40–45 minutes, or until the eggs are fully set and the center no longer jiggles.
Remove from the oven and let rest for a few minutes before slicing and serving
Meal Prep Serving instructions
This recipe makes 8 servings when prepared as instructed. Cut 8 even slices from the baking dish to appropriately portion each serving out.
